Sunday’s ideal for the smallest head start—an hour, maybe. Just enough to make the rest of the week feel noticeably easier without turning it into a whole thing.

  • Monday’s lasagna soup
    1. Chop the onion, zucchini, and bell pepper, then place them together in an airtight container and refrigerate.
    2. Prepare the ricotta mixture and store it in a separate container.
  • Tuesday’s fajita bowls
    1. Cut the bell peppers and onion. Store them together in an airtight container.
    2. Cut the chicken into strips and place it into a bowl. Sprinkle with the chili powder, onion powder, cumin, pepper, sea salt, and chipotle powder. Drizzle in a few glugs of olive oil and toss to coat. Cover the bowl with plastic wrap and refrigerate to marinate until Tuesday.
  • Wednesday’s chicken
    1. Chop the bell pepper and onion into bite-sized chunks. Cut the carrots julienne-style. Place them into an airtight container and refrigerate.
