As we step into August, I realize there’s a theme with me every single year: come end of July, I’m done with summer. I know, utter blasphemy to most people. What can I say? I long for oversized knit sweaters and soups. As a result, I’ve been feeling that summertime laziness when it comes to dinner, which is reflected in this post. You get a sheetpan dinner, a simple supper wrap, and we’re dusting off the ol’ Instant Pot!

Monday‘s Greek sheetpan chicken is a reader favorite. At a glance, the ingredient list looks long. But It’s mostly just basic stuff like fresh herbs and jarred goodies like roasted red peppers and olives. You can omit ingredients to keep it simple if you want!

Tuesday brings us my easy as heck Instant Pot turkey tacos, which are perfectly saucy every time—and done in 8 minutes.

On Wednesday, you’re going to feel like an absolute chef while making poached salmon in tomato wine sauce. Never poached fish before? What a great time to pop a new skill up your sleeve.

Thursday we’re taking it easy with some super simple Buffalo chicken wraps.

And Friday, pizza. As always. But this week it’s a white pizza topped with seasoned chicken, olives, onions, and herbaceous pesto!

Smart Prep Tips for the Week 📝

On Sunday

  1. For Monday’s Greek chicken, create the marinade, toss in the chicken, cover, and pop it in the fridge overnight (covered tightly with plastic wrap). You can also toast the almonds and pop them into a small container, so they’re ready to go, too.

On Thursday

  1. Both Thursday and Friday’s dinners call for pre-cooked chicken. If you’re using pre-cooked chicken from the grocery store, you’re set. But if you’re cooking your own, get it all done Thursday. Use what you need for Thursday night’s Buffalo chicken wraps, and refrigerate the rest in an airtight container for Friday night’s pesto chicken pizza.
