On Sunday

  1. For Tuesday’s shrimp bowls, cut up bell pepper and red onions, and refrigerate in an airtight container.
  2. Do the same for Thursday’s sheet pan chicken Philly cheesesteaks—cut the bell peppers and onions, and store them in their own airtight container. For the mushrooms, line a paper bag with a dry paper towel—it’ll wick away the moisture the mushrooms release as they sit. Add the sliced mushrooms in a single, loose layer (don’t wash them first; excess water is the enemy here), fold the top over loosely so they can still breathe, and set the bag on a shelf in the main part of the fridge, not the door or crisper. They’ll keep nicely for up to 5 days.
