The holidays have had their moment—rich, heavy, gloriously indulgent—and now it feels right to gently come back to ourselves. Think lighter dinners, fresh ingredients, and a more whole-food-leaning approach, without turning dinner into a project. Simple, doable, and actually satisfying is the goal. This next week’s 5-day meal plan is about easing back into everyday life with a bag of vegetables, a loose plan, and zero drama.

About Next Week’s Meal Plan

Bright plates, real nourishment, zero boredom—that’s the goal. This is not about punishment or penance.

Monday kicks things off with Buffalo chicken bowls: quick, comforting, and exactly what you want when you’re getting back into a rhythm.

Tuesday brings shrimp tacos with plenty of citrus and heat.

Wednesday is healing chicken soup, because someone in your house either has a cold or is about to.

Thursday, drag out the air fryer for crave-worthy salmon bites.

And Friday? A fresh, bright pizza that hints at warmer days ahead. Far ahead, but still.

Smart Prep Tips for the Week 📝

Sunday’s the perfect day for the tiniest head start—an hour, maybe. Just enough to make the week ahead feel a little lighter and infinitely more manageable.

  • Monday’s Buffalo chicken bowls: Wash and prep the vegetables. Grate the carrots, chop the celery and cucumber, and place them all in an airtight container to refrigerate overnight. If you’re making the Ranch seasoning from scratch, blend it and place it in a small airtight container.
  • Tuesday’s shrimp tacos: Make the mango salsa. By Tuesday, it’ll be extra flavorful.
  • Wednesday’s chicken soup: Chop the onion, carrots, celery, and kale. Since they all go into the pot at the same time, you can pack them up together in an airtight container and refrigerate until Wednesday.
  • Thursday’s salmon bites: If you plan to make your own from-scratch Thai sweet chili sauce for this recipe, you can make it ahead and refrigerate it until Thursday.

Colorful, bright, and genuinely nourishing—that’s the theme of this meal plan. If you make anything, leave a comment and rating on the recipe, and be sure to tag me on Instagram. I love seeing these dishes make it to your table.
