This week’s 5-day meal plan is all about food that’s satisfying, delicious, and actually nourishing. With Thanksgiving right around the corner, we’re keeping things simple—in the best way. About This Week’s Meal Plan

I’m kicking the week off with a quick, delicious cashew stir-fry that rivals takeout and comes together in under 30 minutes. Tuesday, we’re keeping the spirit of Taco Tuesday alive but with a twist: my chicken tortilla soup, which honestly might be even better than the tacos themselves. By Wednesday, we’re all craving something easy, so I’m giving you my teriyaki-glazed sheet pan salmon with veggies: minimal effort, maximum reward. Thursday brings a classic, creamy beef stroganoff (because comfort), and Friday, of course, is pizza night. But this one’s a little extra special.

Smart Prep Tips for the Week 📝

Sunday’s the perfect day to get a tiny head start on the week, if you can spare an hour. Here are a few things that’ll make the next few days feel a whole lot easier:

  • Monday’s cashew chicken: Whisk the marinade together, then add the cubed chicken. Transfer to an airtight container and let it marinate overnight. Cut the mushrooms, bell peppers, and scallions, and pop them into another container to keep in the fridge.
  • Tuesday’s chicken tortilla soup: Chop the onions and poblano pepper, and put them in an airtight container to keep in the fridge until Tuesday. Make the seasoning in advance by blending the chili powder, cumin, ground coriander, salt, black pepper, smoked paprika, and cayenne. Keep the seasoning in a small airtight container.
  • Wednesday’s sheet-pan salmon: Cut the broccoli florets, bell peppers, and scallions. Place them all in a large container with the sugar snap peas, and keep in the fridge until it’s go time. Don’t start marinating the salmon any earlier than Wednesday morning, or the texture of the salmon will become mushy.
  • Thursday’s beef stroganoff: Cut the onions and store them in an airtight container. Don’t cut and store the mushrooms in advance—they’ll get mushy!
