The Secret to Crispy Sweet Potato Wedges

For anyone new to cooking up their own potato wedges, there’s one thing to keep in mind: you must soak them! Just an hour of soaking can make all the difference (you can soak them for up to 24 hours if you need a head start). This process removes excess starch, resulting in a more even cook and a crispy exterior.

Ingredient Breakdown & Swaps

  • Sweet potatoes. I like using medium sized sweet potatoes. Peeling them is entirely up to you—I switch it up every once in a while.
  • Olive oil.
  • Seasoning. Just super simple pantry staples are used: sea salt, cracked pepper, and garlic powder. You can play around with your own blends, too. There’s plenty of room for creativity here!
  • Greek yogurt. A light and protein-rich base for the creamy dip!
  • Sweet Thai Chili sauce.
  • Hot chili sauce. I go between sambal oelek and Sriracha. The recipe starts you off slow, but if you like heat, add as much as you want!
  • Parsley. Optional, but freshly chopped parsley adds a nice bit of freshness.

Here’s a Quick Rundown on How to Make Them

Preheat the air fryer to 400º F. Cut your sweet potatoes into wedges—you should get about 16 wedges per potato depending on the size and how thick you cut them. Be sure that the wedges are uniform for an even cook.

Drizzle with olive oil and season; toss to coat. Pop the wedges into the air fryer basket without overcrowding them, same idea as if you’d put them on a baking sheet or skillet to roast in the oven. If you overcrowd them, the potatoes won’t crisp up and will steam, leaving you with sad soggy sweet potatoes.

Air fry the sweet potato wedges at 400º F for 8 minutes. Give them a toss, then air fry for another 4 minutes. At this point you should have nice wedges that are crisp on the outside and creamy within.

At any point while the wedges are air frying, you can make the dipping sauce. Just combine the Greek yogurt, both chili sauces, and garlic powder in a small mixing bowl. Set aside until you’re ready to serve.

Storage, Freezing, & Reheating

  1. Much like any French fry, sweet potato wedges don’t keep their crispness after being refrigerated. But they’re still really tasty and worth keeping! Pop them into an airtight container and they’ll keep for 4-5 days; same goes for the yogurt sauce.
  2. These can be frozen! Pop them into a freezer bag and freeze them for up to 3 months.
  3. Sweet potato wedges are best reheated in the air fryer. From the fridge, heat them at 350º F in 2 minute increments until evenly heated through. From frozen, heat them for about 8-10 minutes. Check on them, give the basket a shake, and continue to air fryer for about 5 minutes or until heated through.

Sweet potato wedges

  • 4 medium-sized sweet potatoes I get the ones packaged in packs of four, prewashed and ready to cook. They're easier to cut as opposed to the very large ones.
  • 1 TBSP olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp garlic powder

Sweet & Spicy yogurt dip

  • 1/2 cup Greek yogurt
  • 3 TBSP sweet Thai chili sauce
  • 1/2 TBSP hot chili sauce, like sambal oelek or sriracha Add more if you like more heat! I usually go for 1-2 TBSP for myself.
  • 1/4 tsp garlic powder

Instructions

  • Preheat the air fryer to 400º F.
  • Peel your potatoes if you want, then cut them into wedges. Tip: Slice off the pointed ends of the potatoes, then cut them in half widthwise; cut those halves lengthwise. Finally, slice the halves into wedges—you should get about 16 wedges per potato depending on the size. Be sure that the they're uniform for an even cook!
  • Optional step for crisp exterior: Place the wedges into a large bowl of cool water and let them soak for an hour.
  • Drain the wedges, pat them with a paper towel, and transfer the wedges into a large mixing bowl. Drizzle them with olive oil, then season; toss to coat.
  • Place the wedges into the air fryer basket without overcrowding them, otherwise the potatoes won’t crisp up and you'll end up with sad, soggy sweet potatoes. You will have to cook the potatoes in batches.
  • Air fry the wedges at 400º F for 8 minutes. Give them a toss, then air fry for another 4 minutes. At this point you should have nice wedges that are crisp on the outside and creamy on the in. When done, transfer them to a platter and repeat with the remaining sweet potatoes until they're done.

Sweet & Spicy Dipping Sauce

  • Combine the Greek yogurt, chili sauces, and garlic powder in a small mixing bowl. Taste test and if you'd like more heat, add more chili sauce; set it aside the wedges are ready.
