Meal planning—finally, we’re doing it. It’s the easiest way to start the week feeling like you actually have it together. Having a plan makes the grocery list make sense, the store trip less chaotic, and dinner a whole lot less of a question mark.

A Cozy Fall Meal Plan For the Week

Because when the days get shorter, dinner should get simple (and cozier). This week’s meal plan is all about easy, comforting dishes that taste like they took hours—but didn’t. Think creamy mashed potatoes, sheet pan dinners, one-pot soups, and a weekend-worthy roast. Nothing fussy, just good, reliable food to make the week feel a little softer around the edges.

Smart Prep Tips for the Week 📝

Sunday is an excellent day for weekday food prep if you can carve out an hour—sometimes less. Here are some things to consider for this week:

  • Tuesday’s tacos: Grab a pre-cooked rotisserie chicken from the store, or roast your own on Sunday, shred it, and stash it in the fridge for dinner-time assembly.
  • Wednesday’s salmon bowl: Shred the carrots ahead of time, and go ahead and slice those cucumbers while you’re at it. Store them in individual airtight containers so they’re ready to grab when it’s go time. To really streamline things, I use those microwaveable 90-second rice packets.
  • Thursday’s soup: Chop the onions in advance and keep them in a container in the fridge.
