With Thanksgiving on the horizon, this 5-day meal plan is intentionally simple and light. Whether you’re travelling or hosting, no one needs fussy dinners—and definitely not heavy ones. We’re saving that energy (and stomach space) for the carbs, the pies, the whole situation. So we’ve got a veggie-packed stir-fry, sheet-pan shrimp fajitas, and one of the easiest salmon recipes you’ll ever make. There’s also a very straightforward, very delicious turkey breast for Thursday, if you need it. And Friday? That’s for turning leftover turkey into a cozy, nourishing soup.

About This Week’s Meal Plan

This week starts with a light and wholesome ground turkey stir-fry packed with veggies like crisp bell peppers and red cabbage. Tuesday’s dinner is a wildly simple sheet-pan dinner that puts shrimp fajitas on your table in less than 20 minutes, and Wednesday’s salmon is smothered in a lip-smacking miso glaze. If you’re keeping things simple on Thursday but still want that Thanksgiving vibe, my oven-roasted turkey breast is the ticket. And then on Friday, you can enjoy the leftovers from that turkey in a brothy soup with wild rice.

Monday: Ground Turkey Stir Fry With Cabbage

Sheet Pan Shrimp Fajitas are a weeknight dream! Seasoned shrimp, peppers, and onions are baked on one pan and are ready to eat in less than 20 minutes. Pop them onto a soft tortilla with your favorite fixin's and you're good to go.

Wednesday: Easy Miso Salmon

If you're looking to add more fish into your dinner rotation, look no further. With just 7 ingredients, you can have this yummy miso salmon on your table in 20 minutes. It's buttery, flaky, and ideal for even the busiest of weeknights!

Smart Prep Tips for the Week 📝

Sunday’s a great day to give yourself the smallest head start—an hour, tops. Just enough to make the rest of the week feel noticeably easier.

  • Monday’s ground turkey stir-fry: Chop the bell peppers and scallions and stash them in an airtight container. Shred the red cabbage on a mandoline so it’s extra thin—go ahead and shred the whole head. You’ll only need 2 cups for this recipe, but the rest is great to toss into salads, my high-protein canned tuna bowl, or a quick slaw for slow-cooker pulled pork (or the inevitable leftover pulled pork tacos that follow).
  • Tuesday’s shrimp fajitas: Slice the bell peppers and onions and pop them into an airtight container to keep in the fridge until go time. If you’re making my homemade taco seasoning for this, you can whip that up and keep it in a small sealed jar.
  • Thursday’s oven-roasted turkey breast: I highly recommend brining; check out my apple cider brined turkey breast recipe. You’ll want to do this on the same day, but planning ahead for the brine is smart, so you have everything you need.
