About Meal Plan #11

This is the first meal plan sending us into summer, where we are grilling, plucking fresh herbs and veggies from our gardens, and letting the natural flavors of summer do most of the work. No heavy sauce, no long list of ingredients.

Monday‘s Greek chicken bowls are loaded with flavor, and the leftovers make for a great lunch the following day. It’s an easy recipe to double for lunch prep, too, which is why making it on Monday is ideal—you can set yourself up for the week.

On Tuesday, taco night gets tropical. Shrimp quesadillas stuffed with sweet mango, veggies, cheese, and warming spices. A nice change from the usual!

Wednesday will let you snag some cherry tomatoes from your garden as you throw together a quick, simple bruschetta mixture to spoon over grilled salmon.

Thursday‘s chicken lettuce wraps are heavily inspired by P.F. Chang’s popular chicken wraps. They take only 20 minutes to make from start to finish, which is great because by Thursday, we’re running on fumes.

Friday is pizza night, and there is no pizza that screams summer more than a Caprese salad with juicy tomato slices and fresh basil.

Smart Prep Tips for the Week 📝

Because this week is so easy, there really isn’t much prep to do in advance except for Monday’s dinner.

  • Monday’s Greek Quinoa Bowls
    • Make the quinoa on Sunday and pack it up for Monday. That’s one less thing to worry about when it comes to dinner prep.
    • If you don’t mind brining and want to ensure you get the juiciest, tastiest piece of meat, check out my post on how to brine chicken breasts.
    • OR, toss the chicken in oil and the listed spices, cover it, and pop it into the fridge overnight. Marinating doesn’t penetrate meat the way that brining does, but it’s another great head start to tomorrow’s dinner.
