I’m a sucker for wings, and a nourishing yet flavorful wrap is the perfect answer when I want something on the lighter side. Which is exactly why I wanted to come up with an easy spin at home. With just a few simple ingredients, you’ll have a restaurant quality wrap right there in your hands.

  • Wraps—In the photos you’ll see that I’m using a tortilla for a wrap, but since developing this recipe, I’ve fallen madly in love with Lavash bread. Joseph’s in particular, which you can find at most grocery stores. It’s sturdy, low-carb, and best of all, it makes folding and rolling your wrap a breeze thanks to its large rectangular shape.
  • Chicken—For quick prep and ease, you can buy pre-cooked, shredded chicken or make it yourself in advance. Costco also has these awesome grilled chicken breast strips that work beautifully. Another option is using leftover chicken from other recipes, like these air fryer chicken cutlets or a spatchcock chicken.
  • Vegetables—I like adding shredded carrots for a bit of crunch and subtle sweetness. Minced celery adds a nice touch, too. Not only because it’s usually served on the side of a wing platter, but because it adds the same nice crunch as it does to a tuna sandwich.

Recipe Modifications

  • Cheese—I love adding blue cheese crumbles to my wrap, even if it already has blue cheese dressing. But if blue cheese isn’t your thing, shredded cheddar is great. You could also use feta!
  • Dressing— I like to smear my wrap with about a tablespoon of blue cheese dressing before piling it all on. You could skip this and just use blue cheese crumbles, or be bold like me and just do both. Otherwise, you could use a nice homemade Caesar dressing or buttermilk ranch dressing.
  • Extra veggies—I’m all about incorporating extra veggies and nutrients! I like adding chopped cherry tomatoes to my wrap. Red onion, sprouts, and quick-pickled vegetables are also tasty.
  • Greek yogurt—You can make this wrap really healthy by replacing the blue cheese dressing with plain Greek yogurt. You still get that creaminess, plus extra protein!

How to Make Buffalo Chicken Wraps

Place your chicken into a large mixing bowl. Add the shredded carrots, diced celery, and hot sauce, then mix it up to coat, like you would a chicken salad. Add more hot sauce if you’d like, then set the bowl aside.

Lay the wrap out onto a flat surface. Spoon about a tablespoon of dressing onto the wrap and spread it out evenly up to the middle of the wrap. Just be sure to leave some room around the edges for folding to avoid a mess.

Put down a handful of greens closer to the bottom half of the wrap (not quite centered), and top with the tomatoes and about a cup’s worth of the Buffalo chicken mixture. Sprinkle the crumbled blue cheese over the chicken mixture.

Fold the sides of the wrap toward the middle, then fold the bottom of the wrap up and over the contents of your wrap. Roll upwards, and tuck your filling as you roll the wrap up.

Storage

  • Making it in advance—In this case, you want to be strategic about how you layer your ingredients. Consider laying the greens down first to act as a barrier between the wet ingredients and the bread.
  • How to keep it fresh—Wrap the sandwich tightly with parchment paper or wax paper. These allow airflow and won’t trap moisture, resulting in a limp and soggy wrap. You can then seal it in an airtight container and keep it in the fridge for a day or two. You can store a leftovtheer half of a wrap this way as well.

Buffalo Chicken Wrap

Ingredients 

  • 2 large wraps or tortillas, about 12", I love using Joseph's Lavash bread for my wraps.
  • 2 cups cooked shredded or roughly chopped chicken
  • 3/4 cup Frank's® RedHot®
  • 2 cups mixed greens
  • 1/2 cup shredded carrot
  • 1/2 cup finely diced celery
  • 2 TBSP diced tomato
  • 1 TBSP blue cheese dressing
  • Crumbled blue cheese

Instructions 

  • With two forks, shred your cooked chicken (or roughly chop it with a knife), and place it into a large mixing bowl. Add the shredded carrots, diced celery, and hot sauce to the chicken, and mix it up thoroughly to evenly distribute the veggies and evenly coat everything in hot sauce. Add more hot sauce if you'd like it to be a bit more saucy and intense; set the bowl aside.
  • Place the wrap down onto a flat surface and spoon about a tablespoon of blue cheese dressing onto the wrap, spreading it out evenly up to the middle of the wrap. Leave some room around the edges of the wrap for folding so that you don't have dressing leaking out of the wrap once its folded.
  • Lay down a handful of greens over the dressing, closer to the bottom half of the wrap (not quite centered), and top the greens with tomatoes and about a cup's worth of the Buffalo chicken mixture; a bit more if you think your wrap can handle it. Some wraps are flimsy, so you want to be careful.
  • Sprinkle the blue cheese crumbles on top of the chicken.

To fold the wrap:

  • Fold the left and right sides of the wrap halfway toward the middle.
  • Fold the bottom part of the wrap up and over the contents of your wrap.
  • Roll the wrap upwards and tuck your filling in to secure it as you roll the wrap. it's normal for things to slide around and it may get messy, but that's ok.
  • Once wrapped, cut it in half and serve it with a side of fries or a salad. Or both!

I recommend setting the greens down first to act as a barrier between the wrap and the wet ingredients to prevent a soggy result. Then wrap them in parchment or wax paper. These are breathable papers and won’t trap moisture.
