This recipe offers up a well-seasoned heart-healthy spin on my sheet pan sausage and peppers on a bun. Turkey sausage comes out just as juicy and tasty, and I’ve added some cherry tomatoes to the list of veggies, which are all tossed in my yummy homemade Italian seasoning!

  • Turkey sausage—Be sure to get nice big sausage links, and not the small breakfast sausages. You can use sweet Italian or spicy, if you like heat!
  • Seasoning—This recipe originally listed a bunch of different herbs to blend together, but I’ve simplified it to call for an Italian herb mix which tastes the same. I like using my homemade Italian seasoning.
  • Tomato paste—I love the extra flavor this adds to the veggies! But if you don’t have any, don’t worry about it. You can omit it and end up with a delicious result all the same.

Recipe Variations & Modifications

  • Sausage—Chicken sausage will also work if need be. And if you’re looking to treat yourself to some pork every once in a while, you can totally use pork sausage in this recipe as well.
  • Vegetables—You can swap out one of the bell peppers for a tasty zucchini, summer squash, or mushrooms to change things up!

How to Make Turkey Sausage & Peppers on a Sheet Pan

  1. Preheat the oven to 400º F.
  2. Place all of the vegetables into a large mixing bowl. Drizzle them with olive oil, then add the tomato paste, Italian seasoning, salt, and pepper. Toss well to ensure everything is evenly coated.
  3. Dump the seasoned veggies out onto a parchment-covered sheet pan and spread them out evenly. Tuck the sausages onto the pan between the veggies.
  4. Place the sheet pan into the oven and bake for 20-25 minutes, or until the veggies are tender and the sausages are cooked, reaching an internal temperature of 160-165º F. (You can check this with a meat thermometer.)
  5. Remove from the oven and enjoy!

How to Serve This Dish

One of our favorite ways to enjoy this good stuff is on a bun with some melted provolone cheese, just like with my sheet pan sausage and peppers on a bun. On top, you can opt for some good ol’ mustard or marinara! You could also serve this over rice, like my Instant Pot Rice Pilaf, saucy noodles, or enjoy it on its own! Leftovers are fantastic the next day with some scrambled eggs, too.

Storage & Reheating

  1. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
  2. To reheat, pop the leftovers in the microwave and heat in 25-second increments until warmed through. Another fun option is to tuck the leftovers into a bun with some provolone, wrap it up tightly in parchment, and reheat it in the airfryer for 5 minutes.

Ingredients 

  • 1 lb sweet Italian turkey sausage, You can substitute sausage for pork/spicy sausages if preferred
  • 2 TBSP olive oil
  • 3 large bell peppers, cored and sliced into bite-sized pieces
  • 1 large red onion, sliced into bite-sized wedges
  • 8 oz cherry tomatoes
  • 1.5 TBSP Italian seasoning
  • 1 tsp tomato paste
  • Kosher salt and cracked black pepper, to taste

    We always look forward to this and are having it tonight in fact! My hubby says he feels like he’s at the fair( his favorite thing being the sausage, onion and pepper subs, but this is way healthier and soooo good! We don’t eat high fat anything anymore so I am always looking up recipes using turkey/chicken/veggies/whole wheat pastas etc, just anything healthier for us!  I love to cook and can have something different on the table every night! Thank you!!!!

    I used a bag of frozen peppers and onions from Trader Joes added Italian seasoning . Baked 25 minutes , came out delicious.
