Chicken Fajita Pizza is exactly as it sounds — everything you love about chicken fajitas tossed onto a cheesy golden crust!

If you’re a pizza lover and don’t have a Friday night pizza ritual, we highly recommend it. It’s a great way to celebrate the start of the weekend! Or comfort you after a taxing week. We’re big on a basic cheese, pepperoni, and mushroom pizza in this house. But with it being a weekly affair, we try to switch it up every once in a while—and this Chicken Fajita Pizza never disappoints.
Homemade pizza beats all other pizza.


Don’t get us wrong, we have a favorite pizza joint and we love ordering from it. But, like with anything homemade, there’s something affectionate and nurturing about making pizza from scratch. And the dough we’re using couldn’t be simpler! We’ve been toying with a lot of from-scratch pizza dough since getting our outdoor pizza oven. We’ve yet to find the perfect dough for that situation, but for regular ol’ indoor oven pizza, this dough wins. Not to mention, it takes very little time and very few ingredients. Flour, yeast, salt, sugar, and water. You’ll know the recipe by heart after one spin.
How to make Chicken Fajita Pizza.

There was definitely a time in my life where I would have reacted to the idea of Chicken Fajita Pizza resentfully. But I made it for a party years ago, and I’ve since stopped questioning novelty pizzas. Sometimes it’s just fun to stray from the norm! (Lookin’ at you, haters of pineapple on pizza… )
Here’s what you’ll need to make this nom-worthy pie:
- Pizza dough (If you want things to be even quicker, a premade pie shell will totally work.)
- Salsa
- Shredded Mexican blend or mozzarella cheese
- Cooked chicken, roughly chopped or shredded (I love getting a ready-to-eat rotisserie chicken for this from the supermarket. It works perfectly!)
- Bell peppers
- Onions
- Extra virgin olive oil
- Fajita or Taco Seasoning (I’ve included my homemade blend in the recipe card below.)
- Fresh parsley or cilantro, for garnish
Here’s what you’ll do:
- Preheat the oven to 450º F.
- Place the chicken and vegetables into a large mixing bowl. Drizzle with a bit of olive oil, add the seasoning, then toss to evenly coat the ingredients; set aside.
- Prepare your pizza pan and work your pizza dough out onto it, working it up to the edges of the pan.
- Once your pizza is formed, spoon the salsa over the center of the pizza and evenly spread it out, leaving about 1/2-1 inch of room for a crust to form.
- Evenly sprinkle the shredded cheese over the salsa, and finally, transfer the seasoned chicken and veggies to the pizza, spreading them out.
- Bake the pizza for 12-15 minutes, or until the crust is golden in color.
- Remove the pizza from the oven and let it sit for about 5 minutes before cutting into it. Garnish with fresh herbs, and enjoy!

Equipment

Ingredients
The dough.
- 2 cups all-purpose flour
- 4 tsp yeast
- 1 tsp kosher salt
- 1/2 tsp sugar
- 1 cup warm water
Pizza toppings.
- 1 cup shredded cooked chicken, We like to use ready-to-eat rotisserie chicken from the supermarket.
- 1/2 cup your favorite salsa, Note that in this case, jarred salsa works better than homemade.
- 1/2 onion, thinly sliced, Preferably with a mandolin.
- 1 bell pepper, gutted and sliced into spears
- 1 TBSP extra virgin olive oil
- 1 TBSP fajita seasoning, Preferably homemade.
- 2 cups shredded Mexican blend or mozzarella cheese
- Fresh parsley or cilantro, for garnish
Instructions
The dough.
- Place the flour, yeast, salt, and sugar into a large mixing bowl; whisk to combine the ingredients.
- Set and lock the mixing bowl to the mixer. Attach the dough hook and turn the mixer on low. Slowly add the warm water and let the dough mix for about a minute, or until a nice ball of dough has formed. (Note: You can knead this dough by hand on a lightly floured surface, it will just take a bit longer to form.)
- Place the dough ball in a large, lightly oiled bowl. Cover it tightly with plastic wrap, and let it sit for an hour.
Chicken Fajita Pizza.
- Preheat the oven to 450º F.

- Lightly oil your pizza pan. Transfer the dough out onto it, and work the dough up to the edges of the pan until your pizza dough is fully formed.
- Spoon the salsa over the center of the pizza and evenly spread it out, leaving about 1/2-1 inch of room for a crust to form. Evenly sprinkle the shredded cheese over the salsa, and finally, transfer the seasoned chicken and veggies to the pizza, spreading them out.
- Bake the pizza for 12-15 minutes, or until the crust is golden in color. Remove the pizza from the oven and let it sit for about 5 minutes before cutting into it. Garnish with fresh herbs, and enjoy!







I’ve made the chicken fajita pizza several times and we love it! Would this recipe work if I par-baked the crust for around 5 minutes, cooled, spread on salsa, shredded cheese and added chicken/veggies and then froze to have homemade frozen pizzas ready to pop in oven for an easy meal? Thank you!
I’m so glad you enjoy this recipe, Deb! I’ve never tried freezing it, but I love this idea, and I just did a little research, and it looks like it’s totally possible. What a great idea! After par-baking the crust, cooling, and adding toppings, you can double wrap the assembled pizza with plastic wrap, then foil or a freezer bag to prevent freezer burn, and it should keep for about 3 months. Just finished clearing the table from this pizza recipe, and may I say there were zero leftovers. Nadda! Our kids devoured this, and one asked, “Why do we bother going out to eat when we can make something this delicious at home, using leftovers? “The boy has a point! What a great way to use leftover chicken!

What size of pizza pan do you use for this?
The dimensions for the pan I used here were 14.75″D x 18.43″W x 1.25″H. Anything around that will work!
