Summer is officially here. And while most of you are planning beach days or camping trips, we’ve been hunkered down with our newborn watching The Office and Parks and Rec on repeat. In bed. Like a family of sloths.

We’re definitely looking forward to taking our little dude on patio lunch dates, or out to the country for fresh ice cream, once his little immune system can handle it. But until then, we’re making the best of quality quiet family time. (And napping. So much napping.)

Since we’re homebound, I’m doing what I can to create new recipes and post here at least once a week. As it turns out, newborns sleep A LOT. So content creation is still a go for now. Especially with Nick on paternity leave. We’ve been rocking this whole parenting thing as a team and, honestly, I don’t know how single parents do it! I have so much respect for those who manage to parent alone <3 Helping hands, moral support, and someone to laugh with during diaper blowouts is crucial.

About a month before my anticipated due date, I started prepping freezer meals. Mostly dinner options, like ground turkey taco meat and chickpea curry. But I also threw together a monster batch of this crunchy and healthy homemade granola with cinnamon raisin goodness. This stuff is perfect sprinkled over yogurt—though I’ve been enjoying it by the handful on its own :)

Since making these muffins, I’ve been a little cinnamon raisin-obsessed. But you can get creative and throw in your choice of dried fruits and nuts. Homemade granola is super easy to adapt! But raisins, walnuts, and pecans prove to be a winning trinity here.

Healthy Homemade Granola {Cinnamon Raisin}

Ingredients

  • 4 cups old-fashioned rolled oats
  • 1 cup roughly chopped walnuts
  • 1/2 cup roughly chopped pecans
  • 3/4 tsp fine grain salt (kosher or sea salt)
  • 2 TBSP ground cinnamon
  • 1/2 cup melted coconut oil you can substitute with olive oil
  • 1/2 cup pure maple syrup or raw honey
  • 1 tsp vanilla extract
  • 2/3 cup raisins

Instructions

  • Preheat oven to 350º F. Line a large baking sheet with parchment paper.
  • Combine the oats, nuts, salt, and cinnamon in a large mixing bowl; stir until thoroughly mixed.
  • Add the oil, maple syrup or honey, and vanilla. Stir again, until everything is evenly coated. Carefully dump the granola onto the parchment-covered pan. With a large wooden or silicone spoon, spread the mixture into an even layer.
  • Place baking sheet in the oven and bake until the oat mixture is lightly golden, about 20 to 25 minutes; stir halfway through.
    TIP: In order to get some good clumps and clusters, press the stirred granola down with your spatula to create a more even layer before returning it to the oven. Note that the granola will crisp up even more as it cools.
  • When done, remove the granola and let it cool. (Leave it undisturbed for at least 45 minutes.)
  • Once cool, top with raisins. Break the granola into pieces with your hands if you want those nice big clumps and clusters. If you don't want a cluster-y granola, simply stir it around with a spoon and break it apart as much as you can.

Notes

Storage
Keep the granola in an airtight container at room temperature for up to 2 weeks. You can also freeze it in a sealed freezer bag for up to 3 months. To defrost, simple set it on the counter for 5-10 minutes letting it come to room temp.

    I’m so glad you’re getting some naps in with that new little guy! I’m all over this granola. I become homemade granola obsessed with the weather starts to cool down and this is being made FIRST this year!

    We always make homemade granola…commercial granola is always loaded with sugar. Love this flavor combo and how easy it is to make. Can’t wait to put this into the rotation…..as we eat a LOT of granola. Perfect with yogurt and fresh berries.

    I love cinnamon raisin! I love having homemade granola on hand since it’s such a versatile snack. Plus it makes me feel much better knowing how much of what ingredient (ahem, sugar) is in my granola vs store bought. I’m glad to hear your little one is sleeping well! Hope you’re recovering well!

    Great granola! And I’m not just saying that for the alliteration! It’s a wonderful, simple mixture with lots of nuts, which makes me happy. I personally think the maple syrup option sounds best, but honey and oats go together so well too. Guess I’ll just have to try both. Lol. Glad you found the time to share this one – and congrats on your little sloth!

    You can’t beat homemade granola. If you look at the box of the stuff at the store you have to be a chemist to read it. We need to make a batch of this granola — it would be great in the morning with our yogurt. I’m pinning.

    I love making my own homemade granola because it lets me control the ingredients and the level of sweetness. I love that this one is packed with plenty of oats and nuts and has a perfect level of sweetness too. This would be divine on parfaits or eaten by the handful!

    This granola sounds amazing and full of so much flavor. I remember the feeling of being cooped up with a little one, and it takes time and patience. Hopefully those great freezer meals and this fab granola will make it go well! Can’t wait to try this one.

    My husband eats granola with yogurt just about every morning and he’s been looking for a granola that’s not super sugary. This recipe is perfectly sweetened! Break out the foodsaver and freeze a few batches. Works great and won’t be running out anytime soon!

    I love making granola bars at home. You know EXACTLY what is in them. You can create your own fun combination of flavours. I have one that I give away at Christmas as a food gift too. Healthy eating made right at home.
