Preheating the air fryer to 400º F.
In a large mixing bowl, blend the lemon pepper seasoning, garlic powder, onion powder, smoked paprika, and crushed red pepper flakes. Slowly whisk in the oil, forming a thick dressing/seasoning paste.
Rinse the potatoes under cool water, dry them off well, and transfer them to the mixing bowl with the dressing. Toss them with your bare hands until they're well coated. (You could use a large mixing spoon or spatula, but I find using my hands distributes the seasoning more evenly and efficiently.)
Transfer the potatoes to the air fryer basket and cook them for 10 minutes. Open the air fryer, give the basket a shake, and pop the potatoes back in for another 5-8 minutes, depending on the size of your potatoes. Some baby potatoes are smaller than others, so to be safe and avoid burning, check in at 5 minutes.
When the potatoes are done, transfer them to a serving bowl and hit them with some fresh lemon juice and a few cranks of pepper. Garnish with fresh parsley and serve!
