Sardine Toasts With Goat Cheese

- 8 1/2-inch thick slices of fresh baguette
- 2 TBSP olive oil
- 1 can King Oscar Brisling Sardines, drained I like using the variation with spicy cracked pepper
- 2 TBSP plain goat cheese
- 2 TBSP plain cream cheese
- 4 sweet cherry peppers, sliced; stems removed
- A few cracks of pepper
- Chopped fresh parsley, for garnish
Preheat the oven to 400ºF.
With a serrated bread knife, slice the French baguette into 1/2-inch slices; place them onto a baking sheet.
Using a pastry brush, pat the baguette slices with olive oil. Place them into the oven for about 5-8 minutes or until they start to turn golden, then remove them and let them cool.
Put the goat cheese and cream cheese into a small microwave-safe bowl and heat it up in the microwave for about 15 seconds, or until it's softened enough to stir well and spread evenly.
With a knife, spread the goat cheese mixture evenly over each crostin; crack some black pepper on top.
Place slices of sweet cherry peppers on top of the goat cheese, followed by a sardine fillet.
Top with some freshly chopped parsley and serve.
Leftovers don't store very well because the toasts lose their crisp, but they can still be enjoyed, and it's better than wasting food. So store any leftovers in an airtight container and refrigerate for up to 3 days.
