Fiesta Shrimp Rice Bowls
These Mexican-inspired shrimp rice bowls are well-seasoned in all the right ways. You get sweet bell peppers, red onion, plump, juicy shrimp, all piled over rice, plus whatever else you’re in the mood to throw in! A full meal in one bowl, and it comes together in under 30 minutes.

- 3 TBSP avocado oil, divided
- 10 oz shrimp, shell off & deveined
- 1 bell pepper, sliced into thing strips (about 1/2-inch)
- 1/2 red onion, sliced into thin strips (about 1/2-inch)
- 1 cup cooked rice
Fajita Seasoning
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika I like to use smoked paprika for a smoky flavor
- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp sea salt
- 1/8 tsp cayenne
Mix the spices for the fajita seasoning in a small bowl until well combined; set aside.
Place the pepper and onion strips into a mixing bowl. Drizzle with about 1/2 tablespoon of avocado oil, sprinkle with half the fajita seasoning, and toss to coat.
In a separate mixing bowl, add the shrimp and drizzle with 1/2 tablespoon of avocado oil. Sprinkle with the remaining seasoning and toss to coat.
Heat a cast-iron pan on the stovetop over high heat. After about 3-5 minutes, when the pan is really hot, add 2 tablespoons of avocado oil and swirl it around to cover the bottom of the pan.
Dump the peppers and onions into the pan and spread them out to avoid crowding. Let them cook, stirring every 30 seconds or so, for 3-5 minutes or until tender with slight char marks.
Move the veggies to one side of the pan with a spatula, and add the shrimp, spreading them out so they aren't overcrowded. Cook for one minute, then flip them over and cook for one more minute. Remove the pan from the heat.
Spoon 1/2 cup of cooked rice into a bowl, top with shrimp and veggies, and add any other toppings you might like (see notes for ideas).
