Feta Lemon Vinaigrette With Honey

This easy lemon vinaigrette with honey is fresh, tangy, and great for so many green salads. It's even wonderful for pasta salads! A smidgen of honey balances out the lemon, and the feta cheese adds so much flavor.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 garlic clove
  • 1 tsp Dijon
  • 1/4 tsp sea salt, more to taste
  • A few cranks of cracked black pepper, to taste
  • 1/2 tsp honey
  • 1/2 tsp Italian seasoning
  • 1/4 cup crumbled feta
  • 1 TBSP fresh chopped parsley

Instructions

  • Place all of the ingredients into a small blender and blend until well combined. Check the consistency/texture—it doesn’t have to be completely smooth since the fresh herbs and feta will leave some texture. Give it a taste test and adjust with salt or more honey for sweetness, as needed.

Notes

Storage: This dressing can be stored in an airtight bottle or container for up to three days. For a longer shelf life, replace the garlic clove with 1/4 tsp of garlic powder.
Note that when refrigerated, the dressing will likely solidify a bit. Just leave it on the counter to sit for 15-20 minutes prior to use or give it a good shake.
