Course: Sauce
Cuisine: Italian, Vegetarian
Servings: 4 cups

Ingredients

  • 1 TBSP olive oil
  • 1/3 cup minced sweet onion
  • 3 garlic cloves, grated or minced
  • 28 oz crushed tomatoes
  • 1/2 tsp sea salt, more to taste
  • 3 TBSP chopped fresh oregano
  • 2 TBSP chopped fresh basil
  • 1 bay leaf
  • 1/4 tsp chili flakes (optional)—add more if you want it spicier

Instructions

  • Heat olive oil in a medium-sized saucepan over medium heat.
  • Add the onions and sauté for about 2-3 minutes, or until tender. Stir in the garlic and sauté for 30 seconds.
  • Add the crushed tomatoes, then increase the heat to medium-high to bring to a simmer (not a full boil). Once simmering, stir in the salt, oregano, basil, bay leaf, and chili flakes if using. Lower the heat and simmer, partially covered, for 15-20 minutes. Taste and adjust if needed.

Notes

If the sauce tastes too acidic or “tinny”, stir in 1/4 tsp of baking soda. This will neutralize the acidity in the sauce by raising the pH level, resulting in a smoother flavor. Wait a few minutes before tasting the sauce again.
