Sweet potato wedges
- 4 medium-sized sweet potatoes I get the ones packaged in packs of four, prewashed and ready to cook. They're easier to cut as opposed to the very large ones.
- 1 TBSP olive oil
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp garlic powder
Sweet & Spicy yogurt dip
- 1/2 cup Greek yogurt
- 3 TBSP sweet Thai chili sauce
- 1/2 TBSP hot chili sauce, like sambal oelek or sriracha Add more if you like more heat! I usually go for 1-2 TBSP for myself.
- 1/4 tsp garlic powder
Preheat the air fryer to 400º F. Peel your potatoes if you want, then cut them into wedges. Tip: Slice off the pointed ends of the potatoes, then cut them in half widthwise; cut those halves lengthwise. Finally, slice the halves into wedges—you should get about 16 wedges per potato depending on the size. Be sure that the they're uniform for an even cook!
Optional step for crisp exterior: Place the wedges into a large bowl of cool water and let them soak for an hour.
Drain the wedges, pat them with a paper towel, and transfer the wedges into a large mixing bowl. Drizzle them with olive oil, then season; toss to coat.
Place the wedges into the air fryer basket without overcrowding them, otherwise the potatoes won’t crisp up and you'll end up with sad, soggy sweet potatoes. You will have to cook the potatoes in batches.
Air fry the wedges at 400º F for 8 minutes. Give them a toss, then air fry for another 4 minutes. At this point you should have nice wedges that are crisp on the outside and creamy on the in. When done, transfer them to a platter and repeat with the remaining sweet potatoes until they're done.
Sweet & Spicy Dipping Sauce
Combine the Greek yogurt, chili sauces, and garlic powder in a small mixing bowl. Taste test and if you'd like more heat, add more chili sauce; set it aside the wedges are ready.
