Place your washed + cut potatoes into a large mixing bowl. Drizzle the potatoes with olive oil, and then sprinkle on the seasoning; toss to coat.
Pop the potatoes into the oven for 30 minutes. After 30 minutes they'll be crisp on the outside and creamy on the in.
Baking the potatoes with fresh thyme and garlic cloves tucked among them creates fantastic aromatics + extra flavor!
