California Roll Rice Bowl
These rice bowls are brimming with fresh ingredients along with sweet, salty, and spicy flavors. It'll easily become a favorite!

- 1/2 cup cooked rice
- 1/2 avocado, sliced or cubed
- 1 cup roughly chopped cucumber (about 2 mini cucumbers)
- 1/2 cup diced mango
- 3 sticks of imitation crab, cubed
- 1 scallion, thinly sliced
- 1 TBSP low-sodium soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- A few dollops of hot chili sauce, like Sambal Oelek or Sriracha
- A sprinkle of sesame seeds
Cook the rice as per the directions on the package; set it aside.
Prepare and chop your other ingredients.
Transfer the cooked rice to a serving bowl. Top with avocado, crab, mango, and cucumbers, then drizzle it all with soy sauce, sesame oil, and rice vinegar.
Add hot chili oil—however much you want, depending on your heat tolerance. If spicy foods aren't your thing, omit the chili sauce entirely!
Garnish everything with sliced scallions and sesame seeds, and dig in.
