Lazy Curry Latkes {Gluten free}

Ingredients

  • 1-2 tablespoons of coconut oil
  • 2 cups of mashed potatoes
  • 1/2 cup of frozen peas
  • 1 teaspoon of grated ginger
  • 1 clove of garlic minced
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of tumeric
  • 1/4 teaspoon of cardamom
  • 1/2 teaspoon of garam masala
  • 1/2 of one yellow onion minced
  • 1 egg lightly beaten (to bind)
  • A pinch of chilli flakes
  • Kosher salt and ground pepper to taste

Instructions

  • Mix all of the ingredients into a large bowl, stirring and folding thoroughly to ensure everything is blended.
  • Heat coconut oil in a shallow pan over medium heat.
  • Create little patties and, a few at a time, fry them in the pan at medium heat flipping once or twice until golden brown on both sides.
  • Optional: Serve with sour cream or plain Greek yogurt!
