Lime and Chipotle Chimichurri

Ingredients

  • 2 cups of chopped fresh flat leaf parsley
  • 1/4 red onion cut into chunks
  • 3 garlic cloves halved
  • 1 chipotle pepper in adobo sauce
  • 1/2 cup of olive oil
  • 1/4 cup of red wine vinegar
  • Juice of one small lime
  • 1 tablespoon of dried oregano
  • 1 teaspoon of lime zest
  • 1 teaspoon of sea salt
  • 1 teaspoon of ground black pepper

Instructions

  • Put the parsley, onion, garlic, and chipotle pepper in a food processor or blender. Cover and pulse until everything is minced.
  • Add the olive oil, red wine vinegar, sea salt and ground black pepper.
  • Cover, and process until blended and smooth.
  • Cover and refrigerate until it's time to serve.
