Green Goddess Chicken Wrap

Ingredients

  • 2 large round wraps or tortilla shells
  • 1 cup shredded cooked chicken
  • 2 cups mixed greens
  • 1/3 cup sprouts Any sprouts will do! Mung bean, alfalfa, etc.
  • 1 mini cucumber or 1/4 of a large one, thinly sliced Preferably sliced with a mandolin on the thinnest setting
  • 1 small or medium avocado, cut in half and thinly sliced
  • 4 TBSP Green Goddess dressing
  • 1/4 cup crumbled feta or goat cheese
  • Cracked black pepper, to taste

Instructions

WRAP PREP:

  • Prep/chop your ingredients and set them aside.
  • Place your wrap down on a flat surface. With a spoon, spread about two tablespoons of Green Goddess dressing over the bottom third of the wrap. Be sure to leave about an inch of room from the edges.
  • Place your ingredients over the dressing starting with the greens, and then the sprouts. Place the sliced avocado and cucumbers snug next to the greens, then place the chicken on top of it all. Finally, crumble some cheese on top. Hit it all with some cracked pepper if you're feeling it.

TO FOLD THE WRAP:

  • Carefully fold the sides of the wrap over the filling, leaving about an inch of space in between. You should still be able to see a bit of the filling.
  • Use your thumbs to carefully fold the bottom of the wrap over, still holding the sides taught, and gently roll the wrap forward over itself until it's fully formed and secured.
  • Slice it in half and enjoy!
