It’s amazing how much more I appreciate quick weeknight dinners now that I’m a (tired) mom. I used to love curating elegant meals on a random Wednesday night—and now I can’t even fathom it. (Seriously, what was wrong with me.) But quick and easy doesn’t have to suggest takeout, and it doesn’t have to mean uninspired. This easy soy and sesame beef stir fry tossed with Ramen noodles is the perfect weeknight fix, and it’s ANYTHING but boring 🥩🥦🥢

Are there any pre-pandemic #TacoTuesday rituals you miss? My husband and I used to go to a local taco joint every Tuesday to indulge in tacos and knock back $2 Tecates. (That was also pre-baby 🙃).
I still find myself pondering on how things used to be. But surviving this ordeal has meant starting new rituals. Taco Tuesday at home isn’t so bad, right? These unfussy Instant Pot Ground Turkey Tacos have been a favorite in this house for over a year now 🌮🌮🌮

Quesadillas are usually fried up on a griddle or in a skillet with oil or butter. Now, I’m not at all opposed to the occasional fried food. But if it’s just as good—or better—when baked, then that’s how I roll. And that’s how it’s gonna be with quesadillas in this house from now on. Chinese takeout is such a treat! 🥡🥢 And it’s become part of a few family traditions in this house. Lazy traditions. Like our glorious New Years Eve’s spent in, or settling back in at home after a long trip. I’m all about indulging in the battered and fried goodness the takeout menus have to offer, but! It’s really nice to have a healthy option once in a while. This Slow Cooker Healthy Orange Chicken is perfect for that. It’s quick, unfussy, and it allows you to be lazy. Also, nothing hits the frying pan! All of the flavor, none of the guilt. Not that you should ever feel guilty about takeout—because balance 👌🏻 But this is a great option for when you want to lighten things up.
